5 Minute Prep Smoky Chicken Casserole

I am committing a blogging sin by posting this WITHOUT A PHOTO! 

 

It's been so delicious both times I've made this recipe that I've been too impatient to snap one.  

 

I made this up a few weeks ago when I had 1) a tray of chicken thighs, 2) a slow cooker and 3) no time/energy to do any fancy browning or sauteeing! 

 

If your family loves chicken, and you love using one knife, one board and one pot, then I think you're going to love this casserole!

 

 

Ingredients:

 

  • 1-1.2 kg of skinless chicken thighs

  • 1-2 brown onions

  • 1-3 cloves of garlic (optional)

  • 1-2 diced carrots

  • 200 - 500g of mushrooms, whole/sliced/broken up

  • 1 stick of diced celery

  • 1 bay leaf/shake of dried oregano/both

  • sea salt and pepper to taste

  • 2-4 rashers of your favourite bacon (optional but delicious)

  • 1-3 drops of liquid smoke (necessary, fantastic, can't-live-without-it, buy it here) 

  • 1 tin of condensed tomato soup 

  • 1 tin's worth of your milk of choice

  • 1 tin of chopped tomatoes or 7-8 tomatoes from your fridge that are starting to look a bit too sad for salad

 

Method:

 

1) Dice/roughly chop up your onions, garlic, carrots, celery, mushrooms and bacon. Transfer all to your greased slow cooker.

 

2) Add raw chicken thighs (whole), tinned soup and tomatoes.  

 

3) Add liquid smoke - 1- 3 drops is honestly all you require to flavour the whole dish with a fantastic smoky-are-we-camping flavour.

 

4) Add herbs and seasoning to taste.  You can use fresh herbs such as thyme, parsley, oregano or dried such as oregano and a bay leaf.

 

Set the slow cooker to low for 7-9 hours.  Once you get home to this delicious casserole, take the lid off and tear the chicken pieces apart with a pair of forks. It will fall apart effortlessly.  Taste, adjust salt and pepper and serve with rice, mashed potato and steamed greens if you wish.  You can also finish this casserole with some cream or sour cream to make it milder and creamier.  Also works well with some greek yoghurt on the side.  

 

Our kids are 6 and 9 and will both happily chow this down, especially when it's finished with a dash of cream.  They're not silly!

 

This week we made this and it fed three adults and two kids for dinner with rice.  Three to four generous serves were leftover for lunches!
